Has anyone got a good recipe for traditional 'Rock Cakes'

Simple Traditional Rock Cakes

Ingredients

3.5 oz margarine
7 oz plain flour
1.5 teaspoon baking powder
pinch of salt
0.5 teaspoon mixed spice/ nutmeg/ cinnamon (optional)
3 oz demerara sugar
1 med egg, beaten
1 teaspoon vanilla extract
Handful of raisins
2 tablespoon milk)

Baking Instructions.

1. Preheat oven at 180°C,line a baking tray with greaseproof paper.

2. Mix margarine into the flour, baking powder, salt and spice until mixture resembles breadcrumbs.

3. Stir in sugar and raisins.

4. Add beaten egg,milk and vanilla to form a soft doughy mixture.

5. Using a teaspoons, put uneven lumps of the mixture onto the tray.

6. Bake in preheated oven for 12-15 mins until golden brown.
