This can help Mp3tag - the universal Tag Editor (ID3v2, MP4, OGG, FLAC, ...)
What software did you use to rip the discs because most times you can get it to add all the tag info and then use something like media monkey (you can edit tags with this as well) to transfer to ipod it's better then awful itunes

Tag&rename is a very good program for this too
