You need to alter the tuner settings, and change autobouquetmaker to the French providers to download their bouquet, and you need to change the source you're downloading the EPG from to a French source.
Dunno about a sub, I guess ask in the server request thread. But no that won't work as, as the name suggests, that plugin is for 28.2E which is the sky/freeview satellite.
Suggestions for an alternative? Well as I say, autobouquetmaker can be run with foreign satellites, otherwise not too sure. The Hannibal plugins have ready made bouquets I think but I don't know which satellites they exist for or how well they work.
